Peter started out on Earth, sure, but that doesn't necessarily mean he'd be back there again any time soon, and so on balance the chances of them bumping into each other (all things being equal and Stephen never having to go into space ever again in all his life - joke's on him on that one) were low enough that he's very much never considered what he might say to him if they did.
Now here they both are in the space between multiverses, and you know what? Sure. If there was anywhere he was going to run into a Guardian again other than Earth, in hindsight this is a fairly predictable convergence spot for it. ]
